Aloo paratha is a classic North Indian roti recipe made with whole wheat flour (known as atta flour) that is specially milled for chapati. Instead of just making simple chapati, there are many variations of chapati that use creative stuffings and they are called parathas. One of the most popular paratha is aloo paratha that uses spiced, mashed potato for stuffing. This paratha recipe is easy to make and very tasty. These parathas are mostly eaten for lunch and dinner but they can also be included for breakfast.
Ingredients
A. For Dough
2 cups atta flour (whole wheat flour for chapati)
½ tsp salt
2 tbsp oil
½ cup water (adjust as needed)
B. For Filling
3 potatoes
½ tsp cumin seeds
1 tsp pounded ginger
1 small green chilli, sliced finely
¾ tsp kashmiri red chilli powder
1 tsp coriander powder
½ tsp garam masala powder
½ tsp cumin powder
1 tbsp shredded coriander leaves
¼ tsp ajwain (carom seeds)
¾ tsp amchur (mango powder)
2 tsp cooking oil
½ tsp salt (adjust as required)
Preparation: 30 minutes
Cooking: 20 minutes
Servings: 5-6
