I am a born and raised Münchner (resident of Munich). What you are cooking here ist not a local bavarese speciality, but more like a swiss Rösti. These things are delicious and they fit perfectly to our local food, but they certaily are not local :) (haven't seen them on a Wiesn/Oktoberfest Menu aswell)
