Dead fish will continue to move around until they use up all their energy stores. *It doesn't mean the fish is alive or in any pain.* The phenomenon isn't limited to fish as frog legs can still kick after they've died and chickens can run around with no heads.

For those who don't know in case ur wondering, what's happening is the muscles are contracting due to the presence of salt, muscles use sodium and calcium to allow for contraction and relaxation. In which an influx of sodium will cause them to send an electrical impulse to cause a cascade effect within the muscle cells, leading to what's seen here of the dead meat jumping or moving around. It attests honestly to how fresh it is given the cells are still active enough to contract when stimulated, although I can imagine it was pretty noisy LOL

This phenomenon is known as "cadaveric spasm" or sometimes "postmortem muscle contraction." Although the animal is dead, nerve cells can still be active for a short time after death. This can lead to muscle fibers receiving signals and causing twitching or spasms. Sometimes, after death, muscles can still exhibit some form of contraction due to residual energy in the cells and the buildup of certain chemicals like calcium ions that trigger muscle contraction. There are some more reasons why this happens but those are the main two reasons why.
