Sisig is also oig cheek which is similar to guanciale. I have always wondered if this has been tried. Here it is!

Would love to try that! Never mixed sisig with pasta before!

I'd rather use the sisig as a topping. After mixing it with the pasta and eggs and cheese, it will no longer be crunchy.
