Kim Possible + Even Stevens Brother BAKE Star Wars Cupcakes

RECIPE:

Darkside Stormtrooper Cupcakes (Makes 18 cupcakes)

FOR THE CAKE:
1 ½ cups all purpose flour
1 ¼ cups granulated sugar
¾ cups unsweetened cocoa powder
½ tablespoon baking soda
¾ teaspoon baking powder
½ teaspoon salt
¼ teaspoon espresso powder
2 large eggs, beaten
1 teaspoon vanilla extract
¾ cup buttermilk
¼ cup vegetable oil
½ cup warm water

FOR THE FROSTING:
1 stick unsalted butter, softened
4 oz cream cheese, softened
½ cup unsweetened cocoa powder
1 teaspoon vanilla extract
3 cups powdered sugar
¼ cup buttermilk as needed

18 jumbo marshmallows
Black marker with edible ink

DIRECTIONS:
Preheat oven to 350 degrees. Line cupcake pan with liners.

Use the food safe marker to draw stormtrooper faces on the marshmallows. Set aside.

Sift together dry ingredients into a stand mixer fitted with the paddle attachment. Add the eggs, buttermilk, water, oil and vanilla. Beat on medium until smooth.

Carefully pour into liners about ¾ of the way up the top. Bake for 15-20 minutes or until a cake tester comes out clean. Allow to cool completely.

In a stand mixer fitted with the whisk attachment, whip together the butter and cream cheese until fluffy. Add cocoa powder and vanilla extract. Whisk until combined. Add powdered sugar one cup at a time, adding a little buttermilk as needed. Fill a piping bag with the frosting and refrigerate for 10 minutes.

Pipe frosting onto the cooled cupcakes. Top with stormtrooper marshmallow and enjoy.

She became impassioned with directing and made her debut in Lionsgate’s “Christmas All Over Again”. While she still works as an actress, she enjoys living in Orange County with her husband, Brendan Rooney, and daughters, Isabella and Sophia.
