This is pretty much the recipe my grandmother used to use & I love it.
Can’t help hitting the fridge at night for a forkful (or two). She added hard boiled eggs as well .

I don't care whether this is "typical" in Germany - everyone in every country has their own ideas when cooking a "national " dish. I cooked it and everyone loved it so I did it again with a tweak or two - notably using 50% white balsamic with white wine vinegar together with smokier streaky bacon - and it was delicious. So don't worry about its authenticity, just cook it and enjoy it!!

So... a German friend of mine gave me some information about this:
"First, the distinction that we use vinegar is questionable, we use both, mayo or vinegar (there are about as many potato salad recipes as there are grandma's teaching them) Over here, potatoes are graded Festkochend (waxy) used in bratkartoffeln, gratin or salad, Vorwiegend festkochend (prevailing waxy) bratkartoffeln, soups, pellkartoffeln (peeled potatoes), Mehligkochend (floury) used in soups or mashed potatoes. You can throw in bacon (we usually do not) but more common is Dörrfleisch (dried meat/jerky) in cubes, made from belly of pork, so it is kind of bacon, but in cubes
Basically it boils down to, with or without meat, and the most holy division, mayo or oil&vinegar...
One very interesting variant uses pumpkin seed oil (mainly from Austria, but any will do) its dark color gives the salad an almost olive hue and it looks a bit like already eaten and returned.... but tastes very very good"

Potato salad in France -- when the French make potato salad, they slice an onion while the potatoes are boiling. They then separate the rings and put them in a bowl and, when the potatoes are cooked, they drain them and put them in the bowl and toss them with the onions. Dress with vinaigrette.

I know it's a late reply (apologies--found it late), but I've been looking for a good German potato salad for some of my guests.

This seems to be the best choice I've found so far. I like your explanations for certain ingredients. I use beef bacon and I prefer that. I also use a wine vinegar but not balsamic or apple. I also can't take the fumes from raw white onions, so i used green onions or small scallions.

My only guess for why some of my relatives use hot German salad, (as opposed to cold with mayo and eggs), is because of availability to food supplies and family generational tradition.

Thanks again for sharing and please share one of your famous family and where they originated.

It's fun to find out about the history behind the "German" salad. All my family from Oklahoma makes this type of salad and never ate it because of the pork.

Never green onions! Celery and yellow onion. That's how my German great-grandpa taught my great-grandma how it was made.
