Should we be washing our eggs before we crack them open? CrowdScience answers this and other egg-stremely intriguing questions about chickens and eggs.

Should you wash your eggs? Well believe it or not, there is quite an international debate about this question from CrowdScience listener Susan. In Canada, where Susan grew up, commercially sold eggs are washed before they reach stores, whereas in the UK, where she is now living, they are not. So what is best to avoid contamination?

It’s one of a number of egg-themed questions that CrowdScience tries to crack in this episode. One of our presenters, Marnie Chesterton, heads over to Susan’s home in London to cook some eggs and explore other egg cooking questions from our listeners, such as what is the science behind frying an egg without it sticking to the pan, and why are some boiled eggs harder to shell than others?

Meanwhile, this episode’s other presenter, Anand Jagatia, explores questions about eggs after they have hatched. He investigates a case of curious chicken behaviour sent in by listener Laurie, as well as working out how a cuckoo knows it’s a cuckoo when it’s been raised in another bird’s nest.

Presented by Marnie Chesterton and Anand Jagatia
Produced by Jonathan Blackwell for BBC World Service
Featuring: Dr Vincent Guyonnet, Dr Valérie Lechevalier, Dr Siobhan Abeyesinghe and Dr Ros Gloag

It's not necessary or recommended for consumers to wash commercially packaged eggs, and it may actually increase the risk of contamination because the wash water can be "sucked" into the egg through the pores in the shell. When the chicken lays the egg, a protective coating is put on the outside by the hen. Unwashed eggs can sit on your kitchen counter at room temperature for a couple of weeks and they'll still be edible.

Firstly, the question posed should have been: Should we wash store- bought eggs before storing them in the fridge? Well, since they can be stored in the cartons they came in, no need.
But should we wash them before we crack them open? Well, yes, of course! You don't want all that muck falling into your egg, do you?!

It's important also to avoid eating the shells. That's not a good experience, I tried.

This has long been a contentious issue with the British, but is not even on the radar of interest for Canadians or Americans. They are quite happy putting their washed eggs in the fridge. I have heard that even if eggs have not been washed, refrigeration will keep them fresh longer.

Chicken breeds vary tremendously as they have been domesticated for a very long time ( think of dog breeds). There are two main types - heavy breeds which are used for meat or dual purpose meat and eggs. Light breeds are used for egg production as they don't have the musculature of the meat breeds. However the power to weight ratio of the heavy breeds is poor , and they can only fly up a few feet as mature birds. Extreme heavy breeds like Cornish Game (called Indian Game in the UK ) need low perches. Game breeds like Old English large fowl and bantams descend from stock used for cock fighting and hence are athletic and well able to perch in trees.

In Taiwan, eggs sold in box should be washed and disinfected before they are on the market.

For 21:00 - the best solution for easy peeling of the eggs, is to add a natural base to the boiling water - such as baking soda or vinegar.😊

I hard boil eggs in my ninja foodie pressure cooker. Cook for 4 minutes, natural release for 4 minutes, then manual release until the pressure is removed from the pot. Then ice water bath until completely cooled.
