Hafte-Bijar pickle is one of those authentic Gilani pickles, where the flavor of unripe tomatoes and eggplants combined with aromatic herbs and fresh verjuice creates a delicious mix that’s impossible to forget.
You can serve this pickle after just one day, but I personally prefer to let it sit for a week to really allow the flavors to develop.

1 kg Eggplant
300 gr Aromatic Herbs (Mint, Flat sea holly, Parsley, and Coriander)
500 gr Unripe Tomatoes
200 gr Green peppers
1 Head Garlic
1 Liter Verjuice
1 Tablespoon Nigella sativa
1 Tablespoon Persian Hogweed (Golpar)
1 Tablespoon Salt
