I always sprinkle some water over anything I’m microwaving and cover it with a paper towel or another plate. Both will keep some steam in and keep it from smattering your microwave walls. This works really well to fluff up your rice again.

That’s why there’s power levels on the microwave to allow the frozen stuff to be heated for a longer time at a lower power and for the liquids to be heated for a longer time at a lower power. That makes the food get cooked evenly.

Use the defrost button if you have one on your microwave. Amazing for frozen foods, then rotate and heat up regular a little more.

Lan teaches food science so beautifully. Her demo makes the message clear!

Microwaves dont get hot, microwaves vibrate water molecules in food, this causes friction to produce energy and cook the food

Being from Costa Rica where rice is a must in almost every meal I learned really quickly that the best way to heat up rice at work is to add a bit of water when you get it up, the microwave will evaporate the water and your ride will be nice and soft

always add a drizzle of water to what you’re microwaving! it helps, especially with leftover oily pasta where the original emulsion has broken overnight.

Not very scientific conclusion. My alternative hypothesis is that the microwave cause a standing wave that has its peak in the centre and that also appears true from this test.

So temperature is actually how fast the molecules of something is moving so fast moving ones is hot and slower is colder. When you have ice v water the ice the water molecules are barely moving and are locked together in a compact form not spread out so it’s not going to absorb the microwaves and convert them into heat. The water being more spread out and moving faster will absorb the microwaves as kinetic energy and release them as temperature

“I’ve got an ice block here and a hole at the top”

Me: “say no more.”

I've been using frozen entrees from various manufacturers for quick lunch at work forever and have never had unbalanced heating results. I don't even follow the instructions of stirring up the food midway through the heating process, but that's never produced anything but a perfectly heated dish all the way through.

Actually great way to explain how it works shame you didnt record it going but this explains why a wet paper towel helps stuff warm up

Also you put a giant block of ice in the microwave for only 2 minutes so you can’t really say a microwave doesn’t work because you have to compensate for the amount of weight or size your putting in the microwave for how many minutes

I never use defrost setting, I use the lowest setting and I get cold defrosted food, the defrost setting cooks.

If you are microwaving a decently sized plate or bowl of food, make a hole in the middle so it heats up more evenly. The center always heats ul more slowllly

That's why they tell you to take it out, stir it up and then put it back in for a few more minutes.
