My brother used to make these. My only suggestion to him was to add baking powder and salt. It'll cause the pancakes to be fluffy and have a bit more volume.

Add two tablespoons of sour cream and one tablespoon of flaxseed meal, two tablespoons of monk fruit sweetener, and they're even better, taste like cheesecake patties ! :-) top with strawberries and yum yum
