I built a Electric Trike for under $1000 that goes more than 25mph! This series can apply to building a bike as well. I used a 1000watt front hub motor. I would recommend NOT using a Voilamart kit as there very cheaply made. For the battery I used a Unit Pack Power 52v 20ah battery which has been very reliable and hasn't given me any issues.

I am gathering parts to build a Mooncool MTB trike that is a step through. I am going to make it a 72volt 30AH with a 2000 watt front wheel hub and I will use a motorcycle stabilizer arm to stop the steering from getting too squirrelly. I liked your use of 2 torque arms, that is a great idea as I was only planning to use one, cheers for that! I am going to raise the basket in the back by bolting in a 1/4 inch piece of aluminum and then using that platform to house the battery and electronics. I am going to attach the Fardriver 72250 controller heat sink down against the aluminum plate adding heat sink compound to dissipate more heat. I am eager to get this build under way and am just waiting for the battery at this point.

It sounds like you did not install the pedal assist sensor...I've never ridden an ebike and am converting my mother-in-law's trike with the same kit you used...what are the advantages or disadvantages of the pas? Seems like nobody bothers with it...
