To save the cookies that are too brown use a fine cheese greater to remove the darker bottom.

Parchment paper is my best friend! I use it for everything I bake. Wish I learned about it when I was younger. Ruined a lot of cooking sheets/pan when baking back in my younger days.

If your chocolate chip cookies flatten out too much when baking, add a couple of tablespoons of cornstarch to your flour mixture.

I tell people this all the time. Every time I’m at the store and they’re looking at those dark pans, I tell them they’re no good.
