Pressing is a crucial step in the production of olive oil.
Here Dr Annalisa Rotondi (CNR-IBE) explain the pressing operations used to obtain the oils from the experimental theses of the Zeoliva project, where we used natural zeolites in agricultural fields to defend the plants from the olive fruit fly (Batrocera oleae), the most damaging parasite of olive growing in Italy.
