Sanji knows that Zoro is the only crew member who has both the fighting ability and the moral strenght to do such a thing, if push comes to shove. Maybe Jinbe could do it also, but clearly they don't share the same bound. At the same time, Zoro immediately understands how serious Sanji is and that only he can be the one to eventually kill him.

The way zoro snaps always gets me you can tell hes not only confused but hes worried about sanji but this was the point in the battle zoro started to dominate so i feel like sanji gave him that extra boost just because zoro has ti make it out alive to see Sanji

I know this is just the shipper in me talking but even without that, it's clear that they both have great respect for each other and their strenght. Sanji trusts everyone in the crew but know that only Zoro will be able to handle the burden and the act of killing him if it comes to that. And Zoro knows the "stupid cook" enough to know that what he's asking is beyond difficult to ask others. Dying by the hand of his best rival, his best friend (his whatever could be between them *gets shot for that*) makes sense for both of them.
