1-up it! You can use a shader with a fancy gradient to control when to flip faces with a vector displacement.

For those wondering why material can't be applied to the mesh after adding the nodes, this is due to a glitch/behavior of dual mesh. Add a set material node right after the dual mesh node and set your material there.
