The diagram of pressure over volume is only true at constant temperature. In your case, the pressure is (mostly) constant in the syringe, as it primarily counteracts the air pressure - neglecting friction etc.

A Volume over Temperature plot would therefore show you the correct dynamic of the system.

I finally understand how Sterling engine works! but I never realized how fast the air cools down.

That's really quick! It is as if upon contact with a cool surface a chain reaction happens where all of the atmospheric atoms lose their thermal energy very quickly! I can finally design an engine!

The pressure does not increase because the volume expands, the pressure would only increase if the volume stayed the same.
