You wanna be PROUD of your meat. Anytime I prepare anything on my smoker, I offer up BBQ sauce options when serving the dish. NEVER drown your meat in BBQ sauce beforehand. Your meat is supposed to be seasoned, juicy, and tender and good enough to eat WITHOUT sauce.
