These were the dishes from chef Rasmus Munk during the Alchemist x Mugaritz pop-up, and now we are back in the realm of deliciousness with some of the best bites we’ve had this year. The perfect omelette continues to be a favorite, but the cryo-fried mochi dough filled with Gruyère cheese and Joselito ham was battling for the first place. However, the airy bread made from sheets of potato starch brushed with browned butter topped with a foam made from yeast, butter, egg yolks, and crème fraiche, and topped with thin slices of vintage 2015 Joselito Pata Negra ham made it onto our 25 best dishes list this year! #shorts #shotoniphone

The whole restaurant looks insane! What a visual experience! The plating of each dish and how it all plays into the theme! The aerated milk and caviar, butterfly and crispy nettle, the oyster and caviar that looked like it came from inside an eye, and the moldy bread! Thanks for taking us on this culinary journey with you! Btw, what was it like eating a butterfly?

Cannot decide if it is quirky and I like it, or if it is stepping into edginess and tastelessness. Leaning towards the latter. Though I have been binge watching videos of Noma dishes today, which are a polar opposite to this in vibe.
