The main reason for separate full and widescreen versions was because 4:3 TVs were still common back in those days. Plus, LCD TVs had only just started to enter the market in 2006; most people still had CRT TVs. In summary:
The widescreen version (21:9) was used for the original theatrical release and the widescreen DVD, and is the version used in more recent releases/airings.
The fullscreen version (4:3) was used for the fullscreen DVD, older TV airings, and for the rare 2007 VHS.
The open matte version (16:9) was used for newer TV airings, though has now mostly been replaced by the 2013 widescreen version.

Out of the three, the open matte DEFINITELY 100% A+ is the best one for me. Because it pretty much combines both the full-screen & the wide-screen versions at once. I don't know why Disney+ didn't stick with THAT one instead. Oh, I know why, the widescreen version is the more modern one. But, they couldn't even THINK to put the full-screen version into it either. I don't know. I still like OM (Open Matte) best of all.

I remember BBC One and BBC Three actually aired the Open Matte version of ‘Cars’, instead of the normal widescreen version.

Full screen: Old tv airings and 2007 vhs (upper left corner)
Open matte: Modern tv airings (bottom)
