Jesus was trying to keep who He was quiet to fulfill prophesy:

Matthew 8:4
And Jesus saith unto him,  See thou tell no man; but go thy way, shew thyself to the priest, and offer the gift that Moses commanded, for a testimony unto them.

Matthew 9:30
And their eyes were opened; and Jesus straitly charged them, saying,  See that no man know it.

Matthew 12
16 And charged them that they should not make him known: 
17 That it might be fulfilled which was spoken by Esaias the prophet, saying,  
18 Behold my servant, whom I have chosen; my beloved, in whom my soul is well pleased: I will put my spirit upon him, and he shall shew judgment to the Gentiles. 
19 He shall not strive, nor cry; neither shall any man hear his voice in the streets.
20 A bruised reed shall he not break, and smoking flax shall he not quench, till he send forth judgment unto victory. 
21 And in his name shall the Gentiles trust. 

Matthew 16:20
Then charged he his disciples that they should tell no man that he was Jesus the Christ.

Matthew 17:9
And as they came down from the mountain, Jesus charged them, saying,  Tell the vision to no man, until the Son of man be risen again from the dead.

"King of the Universe" is standard in Jewish prayers to God. His crowd there was largely Jewish. There was a very stern and trying-to-find-fault Pharisee in the crowd, among other Pharisees. If Jesus allowed the man to call Him "King of the Universe", He would have been letting the crowd know He was God. He didn't want to do that yet and just as @mrs.jaywojo5426 told you already, He had to stay undercover until the time was right in order to fulfill the prophecy of the Messiah. If the Pharisees had heard someone call Him God AND He allowed it, there would have been an inquiry immediately afterward. If that had happened, the other events that were still to take place could have been disrupted, halted. Or things could have gotten out of hand very quickly. Please look into Jewish practice to better understand what's actually happening in The Chosen. The scene has ZERO to do with Mormonism and their beliefs (just like the rest of the show).
