Wendy’s PSMF Apple Spice Cinnamon Bread 2.0
Pre-heat the oven to 350 Degrees F
Bread Ingredients:
500g Egg Whites
1 tsp Cream of Tartar
½ Tsp Redmond Salt
2/3 Cup Egg white protein powder
½ Tsp Xanthan Gum
1 Tsp active dry yeast
2 Tbsp Allulos
1 Tbsp Apple Pie Spice
Filling Ingredients:
2/3 Cup Besti Brown Sugar Substitute, Monk Fruit & Allulose (or any other brown sugar substitute)
1 Tbsp Cinnamon
½ Tsp Apple Pie Drops
Mix all of the filling ingredients in a separate bowl and set aside.
Instructions:
You will need: two small bread pans or one large Bread pan well sprayed or use parchment paper with spray.
Add the egg whites, cream of tartar and salt into the mixing bowl and beat on high for 10 minutes, or until stiff peaks form. Each mixer is different.
In another bowl add all of the dry bread ingredients, mix well with a fork or whisk and set aside.
Once you have stiff peaks add the rest of the dry bread ingredients and mix on low until just incorporated well. Do not over beat at this time.
Building the Bread:
Remove the mixing bowl and start adding a few tablespoons of the filling mix folding it in just a little. Don’t totally mix it up, leave it just sprinkled around in the batter. You want the filling mix swirled in with nice streaks of the filling mix throughout the bread batter.
Add a nice layer of the batter in your pan then sprinkle some filling on top then add the bread batter, layering a spoonful of filling then batter with the filling swirled throughout and so on. Add any leftover filling mix on top the swirl it in lightly on top so that it is just incorporated in the topping.
Cook in a pre-heated 350-degree oven for 30 to 40 minutes or until done then turn off the oven and allow the bread to cool down in the oven for 20 to 30 minutes before removing so that it doesn’t fall.
Allow to cool off on the counter then carefully remove from the bread pan and place on cooling rack and allow it to completely cool down before cutting.

I took this recipe and I made 24 mini muffins (fill half, put some filling and then top sealing the edges). I also got 2 loaves. I am topping the mini muffins with a simple frosting (butter, confectioners swerve, vanilla, salt & some apple pie spice).

I totally agree with you Wendy about lowering the fat and increasing the protein!!! Ive also been weight lifting with much more weight...and I'm trying to increase my protein intake. It's not always easy for me to do...but I'm hoping making some of the PSMF bread will help me get there. I'm new to your group so I'm learning alot. I LOVE everything you and Harry are doing!!! Thank you!!!

I made a apple cinnamon spice bread with the keto chow, I also “swirled “ it in along with some layered in.
It was really good! Hubby is not really Keto so the second one had chopped pecans mixed in the cinnamon mixture.
He loved it! My loaf I had a few slices left over so I made french toast again really good .

Wendy, you are RIGHT. I approach keto like you. I'm older and need more protein and not as much fat. My body is already fat adapted (This goes for everyone) and my body knows what to burn. Love the way you explained it. This educational prospective is really needed and appreciated
