Low Carb BlackBerry Cobbler

Makes 4 ramekins

2 cups Blackberries
2 Tbsp sweetener like Swerve or Besti
1 tsp lemon juice
1 tsp xanthan gum

Topping
2 Tbsp Chopped almonds
2 Tbsp chopped Pecans
1/2 cup almond flour
2tbsp sweetener like Swerve or Besti
1/4 cup coconut oil

Preheat oven to 350 degrees.
Grease 4 ramekins
Get a sheet pan ready with foil

Mix the first 4 ingredients in one bowl
Add to ramekins and put in oven for 15 minutes

In another bowl mix the ingredients for the toppings. Mix until crumbly

Top ramekins with topping and bake another 15 minutes.

Take out of oven and cool to room temp.

Thanks! I LOVE blackberries! My berry bushes did awesome this year and I canned several jars of blackberry puree. (More in the freezer to prepare, yet, too.) I have some every morning with my Greek yogurt. 😋

OK - but not traditional - the cinnamon will cover the flavour of the blackberries, but almost all US puds use cinnamon - and try it without lemon and sweetener for a more intense blackberry flavour, blackberries are a hedgerow fruit and lemon wouldn't have been used by country people. Lovely crumble.
