Feel free to swap out the xylitol for more erythritol or Swerve!

-Pro tip: Make a full batch now and freeze the extras to munch on throughout the month. Just microwave a single frozen cupcake on 15 second bursts, two or three times, just enough to warm it up to room temperature, not enough to melt the frosting.

I made this and it turned out amazing! I did make 1 big layered cake and i doubled the frosting to fill it and make nice figures, i also trimmed the cake and with the crumbles left over i made little cake balls and put them on top and it looked amazing!

Oh my gosh this looks so yummy! I’m going to try this in a few days! Really excited. We use erythritol, so how much is “a little bit more”? I don’t want them to be too bitter. But, does xylitol have the same issue as erythritol where it solidifies after a few days?

If I crunched my numbers right. This looks like it has about 15 carbs per cupcake. Remember KETO is 50 carbs a day and not all at once. Too many people think it's about net carbs and they wonder why they can't lose weight. If you are at 50 carbs and can't drop then do 40, 30, 20. Try to hit 80% fat and then 10% for the other macros. But DANG! That does look good.

I made this today but my cake was wet. It was cooked through..just dense and wet I followed the recipe fully. Im thinking we only have ground almonds here could this be the problem. I dont think we have superfine almond flour in the UK and if we do it must be deadly expensive 🤭
