In Asian we have lots of these jelly desserts. Some are made from tapioca, to potato, to cornstarch, and mixed with fruits, nuts, and or cream or coconut milk.

I used to dig up the big roots, scrub them clean, shred them up fine and seive it, leave it all in a bucket with water covered over night.
In the morning the starch all falls to the bottom and the water is clear again. Pour off the water and you are left with a big chunk of starch. You can dry it out or dehydrate. Use the starch to make yummy stuff. Im in America and it grows everywhere ❤
You can also make jelly out of the flowers. They are purple and literally smell like grapes!! If you acidify the syrup it will turn purple, if not its a grey color. The leaves are also edible. Not my fav tho..
