Yummy, reminds me off my childhood, mom and dad would drag us kids from Denver, Colorado all the way across the state to Palisades, Colorado to buy bushels of fruit just to drive home and spend the entire Labor day weekend Canning what they had bought, so we could have peaches all winter, mom would make jams and jellies, but my favorite was her Christmas compote, a mix of peaches, apples pears tart Cherries and Gooseberries, she put it up then come Christmas morning she would make the lightest pancakes, with her compote, it had extra cinnamon and nutmeg. best Christmas feast ever!

First, let me say how much I enjoy your position in the kitchen. I appreciate close-ups when it comes to seeing what the product looks like. I've been meaning to tell you this for WEEKS, but, keep forgetting.
Peeling a pear with your "pear"-ing knife. haha!

We used prunes, pineapple, peaches, and apricots. Delicious hot or cold, with oatmeal or ham/pork.

Hi Mary! Beautiful kitchen. Does the fruits have to be peeled? I’ve never made compote but I’d like to start so I can eat with my oatmeal. Thanks

Good grief!!! I just entered a comment, and I don't see it. I think yet another one went to spam. I'm thinking they don't like me using so many *M's* when describing a taste. I noticed I used the *M's* in the applesauce video. LOL! YT. Go figure.
