I've been a butcher for 33 years, and the Chuckeye is my families favorite I'm retired now, but I miss cutting meat it's all I've ever done, so I appreciate your videos.

This is one of the most underrated professions in the US. Not in other countries but in the US its been underrated for so long. It's nice to see it getting the recognition it deserves again in this country. There's an art to it that goes back to the beginning of God's creation. People are used to picking up dull pink beef steaks and roasts from Walmart and don't know what they are missing from a cherry red, freshly butchered steak. Right now they're starting to push fake chicken and eventually beef. Now is great opportunity for local butchers to market fresh, healthy, real meat products and take back some of that large market share Walmart and others had stolen from them over the last few decades.

Been cutting meat for a good 5 years now, most people don't know this. I love the first 2 cuts from the chuck eye. A nice budget ribeye if you ask me. Occasionally a costumer would request it, and I would be more than happy to cut and serve.

I really liked when he had them back to back so you can see that is one long continuous muscle. Wish had continued that past the Rib-eye so we can also see the Strip steak.

Crazy thing is the price difference is insane. I buy choice Chuck eye all the time. They call it the poor man’s ribeye but I’ll take it for a fraction of the price. Can be a $10 or more time difference

There's a store near me where I get terrific chuck eyes for less than half of a rib eye, great steaks. Just a bit more gristle/waste but the meat is great and the price makes it worth it. They're also generally smaller than the rib so. I often cook two. 😊

My favorite steak-chuckeye. Tasty, tender, and juicy! I grill mine over a wood fire. Sometimes dry rubbed, sometimes not.
