INGREDIENTS:
Chicken 1.5 kgs
Gr chillies-6 nos
Garlic-15 nos
Ginger-3inch piece
Green corriander-1/2 bunch
(Or 1 cup chopped up)
Lime-2 nos
Peppercorns-1 tbsp
Cinnamon-2 inch piece
Cloves-4 nos
Cardamon-2 nos
Cumin-1 Tsp
Onion- 1 no
Oil -3 tbsp
METHOD:
1. Cut the chicken down the centre of its back into two pieces. Each piece has a leg and a breast . Retain the skin as the skin prevents the chicken from drying out while cooking.
2. Marinate the chicken with salt and the juice of both the limes
3. Grind together the green chillies, garlic, ginger, green Corriander, onion, cinnamon, cardamon, cloves, peppercorns and cumin with a little water to form a thick smooth paste.
4. Marinate the chicken with this paste in a best case scenario- overnight, but if you are always fighting with time like me then for a min of 2--4 hours.
5. Heat the oven to 200 degrees C
6. Heat a pan with 2 tbsp oil till very hot and sear the chicken skin side first. This also helps in sealing the moisture inside. Turn over and sear on the other side. Remember that while searing, the pan and oil should be very hot , therefore make sure that the chicken is at room temperature and the pan not over crowded as this will bring down the temperature of the pan.
6. Transfer the chicken to a baking tray . Pour over all the pan juices, extra marinade and remaining oil and about 1/4 glass of water or chicken stock in the tray and bake in the oven for about 45 mins or untill the chicken is cooked. You can check if the chicken is done by inserting a pointy knife through the thickest part of the leg. If no liquid oozes out, then you are good to go.
7. Serve hot with crispy home fries, a salad , and the gorgeous tray juices as a sauce.
