What if your next twist was that leather armor could be upgraded in the smithing table with different items that would give it bonus effects. Yellow Wool could make it unbreakable, obsidian could give you fire protection when you have it on the full set, Iron and Diamond would make it protect you more, eye of ender would allow you to teleport between dimensions at will, etc.

Minecraft Manhunt but you can only track when you're not in the same dimension. Have the hunters start in the Nether but they will be fully equipped with at least Iron Armor and Tools. They can only track you while they are not in the same dimension, so if you go into the Nether while they are still there, they can no longer track you until they go to the overworld, and vice versa. This will create a Divide and Conquer setup, as at least one will have to be in a different dimension to be able to constantly track your location. This also means if they want to get your coordinates for the stronghold, one will have to wait in the nether to get your coords once you get there.

you can give blindness and darkness to your hunters for 1-2 min every 5min cooldown


(cooldown cus u cant see anything in darkness effect but no cooldown works too, more torture for the hunters)
