Pita Bread Recipe (makes 5-6 pitas):
260g Water
1 tsp Sugar
2 tsp Dry Active Yeast (or 1 packet, I don't double this or the sugar when doubling the recipe)
30g Extra Virgin Olive Oil
375g Bread Flour
13g Kosher Salt (I always use diamond crystal - about 4 tsp)

Assuming you're using a normal oven just crank it as high as it will go. Make sure whatever surface you're baking on (cast iron, pizza stone, etc.) is preheated for 30ish minutes before baking.

Great Video, your dough is a higher hydration compared to most on youtube hence the need to "slap & fold" results in a more soft fluffy high quality product, Thanks Aaron keep the recipes coming.

Really great video! Slightly different approach, when making the dough with higher hydration. But will have to try this next time around! Also, if you do not have cast iron pan or want to cook more at a time (in the oven) flip over a baking sheet and use that.

I can't seem to get the dough to how it looks at 2:54, and I'm after 4 rounds of slap and folds (10 mins wait in between)
Any suggestions on what might went wrong, and how to get that dough smoother? It never stops being sticky

Pita is the bread my mom use to buy and it sat on the counter, dried out, and was then thrown away, because it's never good from the store.
