Bread is one of the highest food waste categories but there are many ways to reuse it and transform it into bread crumbs, croutons or this delicious quick and super easy dessert with no need to cook anything!

INGREDIENTS BREAD BASE:

5 x slices of bread
1 1/2 x cup of coffee
1 x tbsp sugar

INGREDIENTS CREAM:

300 x g silken tofu
150 x g coconut milk (just the solid part)
3 x tbsp sugar
Sifted Cocoa powder

STEP BY STEP:

- Cut your bread into pieces and soak it with coffee and sugar
- Mix it with your hands and transfer to a flat flat container to make the base of your dessert (flat it out with a spoon)
- Add your tofu to a bowl along coconut milk and sugar
- Whisk together until you have an even mix
- Add your whisked cream on top of your bread
- Sprinkle cocoa powder and refrigerate until firm

NOTES: you can use agave instead of sugar and you could add cashews to make the cream thicker

You can also make one of the oldest "poor people" comfort food: pappa al pomodoro. It's an old Tuscan recipe and it's amazing. You will need:
-350 g stale bread, the harder the better
- 750 grams of tomatoes, preferable not vine tomatoes (this goes for any Italian salsa or soup, they are too watery and grainy to have the right consistency)
- 1 litre of vegetable stock
- Garlic as you wish (I want to fight vampires with my breath so I use a ridiculous quantity)
- Basil
- Your favourite chilli pepper
- Pepper
- Salt
You will make a tomato sauce: in a pan put oil and garlic, roast the garlic, then put the tomatoes in. Put salt and pepper in.
Meanwhile take the bread and break it in small pieces, put the bread in the vegetable stock.
Put the bread and stock in the tomato sauce. Cook it until it tastes right. If you don't like the chunks you can blend it or smash it with a potato masher.
Top with basil and your favourite chilli pepper.
Voilà, one of the easiest dishes, very tasty, very economic and so comforting in a cold winter day. Enjoy!!!

My Pawpaw used to do this with old biscuits from breakfast simply pour coffee over the biscuit and then sprinkled sugar on it, he called it a "Soakie"

Alternatively you can also make bread pudding, or grind the bread down, make bread crumbs. Or feed it to the chickens/pigs/dogs.

You can also make bread pudding!
It's easy, and tasty
You only need
-bread (or pretty much any pantry/bread, wholegrain bread or breadsticks work too!!)
-milk (as much as you need)
-sugar (maybe a cup)
-1 egg or more, depending on how much you want to make
-vanilla extract

First you cut your bread into little chunks and soak them in milk until softened, then you begin to smash them with your hands (or use a blender, less messy and a lot faster!), add your egg, vanilla extract and keep mixing until you get a little runny but still pasty consistency.
Then in a pan you caramelize sugar (don't burn it!) And grab a cake mould (has to be round and have a notch in the middle) and pour your sugar there, making sure to coat as much of the mould's walls as possible before pouring in the batter then cook it in the oven or on a double boil (no exact temperature nor time, sorry), once done let it cool, demould and you got yourself a nice bread pudding that's great as dessert!

I usually throw in the paper packets the tofu comes in as well. Gives robustness to the dish
