I kind of wish he actually kept the design of the mobs similar to the actual ones but more realistic than altering them, like the vindicator into a lawyer and such

Great designs! For the enderman, I would add a bit, though. I'd either hunch him forward, or lean him to the side with one arm dangling or even dragging on the floor. Plus, he's meant to be tall. I'd boost him a little over MC's normal height. You're looking for.... ghostly undead bridge troll from space...
