About Pai:

Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin's Kitchen.

Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

I know, as a Mexican, lime is super important in our cuisines. So my mom and I indulge in tofu shrimp fried rice with plenty of sriracha and lime because we need the garlicky spicy acid that that combination offers.

In Malaysia, we got our version of salted fish fried rice (I dont if it was inspired by Thai cuisine or chinese, but still, its so good) im grateful because we can get majority of halal Thai dishes here in Malaysia and Thailand itself🎉🎉🎉

The quickly salted salmon isn't entirely comparable to the Thai "plaa kemi", the thai version smells and tastes a lot more funky than quickly salted salmon.

I have to order your cookbook. I've tried to make Khao Pad Ka Pow Goom (shrimp) and it never seems to come out right. Same with my Gang Keel Wun Gai. I need help.
