Top of the River famous appetizer pickled onions | the best onion recipe to get with vegetables

We love to have pickled onions with our vegetables, hotdogs, hamburgers or just even with cornbread. I've used a different recipe before but I wanted to try this one from the local restaurant, Top of the River. We love them!

We had a wonderful restaurant in Charleston, SC called Jestine's Kitchen which served the best southern food. They served a similar dish but it also had cucumbers--it was Ice-Box Pickles. Unfortunately, they closed due to the pandemic but the recipe was in a local magazine. You loosely fill a 2 qt. jar with sliced cucumbers and onions. Fill with 1/2 water and 1/2 vinegar. Add 1 cup sugar and 1 tsp. peppercorns. Seal & shake to mix. Refrigerate overnight; taste and add more sugar if desired.
