As for the composer and information on this magnificent march, it's normal not to find a specific name, because there were several. In fact, it's a part of a military ceremony. Bertrand Riel-Jehl, from the Club d'Ambassadeurs d'Alsace (Alsatian Ambassadors Club), an expert of classical music, explains on his blog (in French) this march (origin, when it's played, how...). Here I translated what he writes: "the “Preußischer Zapfenstreichmarsch“ and the bell of the retreat open the second part of the ceremony. This continues with a prayer, a Russian military tradition, adopted by the Prussian army.
To the order: “Helm ab… zum Gebet!”, ("Take off your helmet… for the prayer") all members of the detachment (apart from the torch bearers) remove their helmets and the band plays the choir “Ich bete an die Macht der Liebe" by Dmitri Bortniansky.
After the order “Helm auf!” ("Put your helmet back on"), a roll of drums accompanied by fifes and the sound of trumpets sounded the German national anthem.
The officer commanding the detachment announces the end of the “großer Zapfenstreich“, the torch bearers return to their parade position and the detachment leaves the square to the sound of the “Preußischer Zapfenstreichmarsch“" Hope this cleared up a bit and was helpful.
