Not only at start, Ducati Desmo also use it in the cornering so the rear wheel still at the ground.

Does it lower the CG
It compresses the suspension, taking out it's travel, reducing the CG from rising.

It also lengthens the distance from the from the front sprocket to the rear sprocket, creating a greater moment arm for the torque of the rear wheel to overcome.
