This easy cinnamon raisin bread is light fluffy and has a delicious cinnamon sugar swirl. Its one of my favorite on the go breakfasts.

Ingredients
2 tsp Instant Yeast 5 g
3/4 c + 2 T Warm Water 208 g
2-1/2 c + 1 tsp Bread Flour 416 g
1 t Salt 8 g
3 T Sugar 40 g
1 Eggs
1/2 c Raisins 64 g
1 tsp Cinnamon 2 g
3 T Unsalted Butter Softened 40 g

Cinnamon Swirl
4 T Unsalted Butter Melted 56 g
1/2 c Sugar 110 g
1 T Cinnamon 6 g

Egg Wash
1 Egg
1 T Water

2 years since you posted this so I'm not sure you'll see this This recipe has been printed and put in my book as 'THE' recipe for cinnamon raisin bread. Sometimes you look for and pick a recipe that isn't at all very good but this one...this is THE BEST! I used your tip about double pans which worked beautifully and I'll always credit you with this going forward. The heel slice I sampled and a bit of a crisp for the crust but it wasn't tough or chewy, my GOD this is a good recipe!!! Thank you for sharing!!! ps: I was going to take 1/2 to work and share but it's Saturday and I'm now rethinking this option! Bravo!

Thank you for this delicious nnd simple recipe. I made it and it was by far the best cinnamon raisin bread i've ever had in my life. I stretched the dough out very thin, which led to lots of layers like a croissant, except better because it had raisins and cinnamon!

Thank you for recipe and THANK YOU for using metric measurements! I use a scale for ALL bread recipes. I actually just let my guard down and tried a recipe using "cups" of flour. Of course, I had a brick ball of dough. I usually start with a lot less flour than called for, but I don't know what I was thinking...anyhooo, I'm sticking to metric recipes from now on.
