A rainbow of vegetables, roasted until sweet, tender. All blended together with stock and creamy-yet-sharp parmesan and you’ve got the perfect lunch to warm you up from the inside. Dishing up steaming ladles of this roasted vegetable soup with chunks of fresh bread is one of my favourite ways to enjoy lunch over Winter.

I love to roast them until golden and caramelized to add lots of extra flavours. Throw in some parmesan too for a creamy finish.

This soup is packed with nutritious vegetables!

Ingredients for this roasted vegetable soup:
▢1 large sweet potato - peeled and chopped into chunks
▢1 red bell pepper - deseeded and chopped into chunks
▢1 yellow bell pepper - deseeded and chopped into chunks
▢2 medium carrots - peeled and chopped
▢3 cloves garlic - left in the skin
▢3 tbsp olive oil
▢½ tsp salt
▢½ tsp ground black pepper
▢½ tsp paprika
▢½ tsp ground cumin
▢1 red onion - peeled and chopped into wedges
▢1 litre (4 ¼ cups) vegetable stock - (use vegetable bouillon for gluten-free)
▢35 g (⅓ cup) grated parmesan - (Use vegetarian hard cheese for full vegetarian version)

To serve:
▢2 tbsp grated parmesan
▢a few sprigs of fresh thyme

I want to personally thank you Nicky for the recipes you have shared. Because of the pandemic situation I have lost my home and I now live in a charity run community of 16-20 people. I have become the main chef to cook meals for everyone in the community every day and some of your recipes have been fantastic for making it easier on me with simplicity and always pleasing everyones tastes buds. Today I tried your pesto chicken recipe (scaled up to 16 people) with baby potatoes and steamed veg and it went down a treat while being simple to assemble. This video popped up in my feed last year when I was in Ghana and I saved it.

Just was scrolling through my saved cooking videos and I remembered I had most of everything in my kitchen. It came out sooo good soo tasty. Im a little surprised I must say. 10/10

Served it to my God daughter with grilled Ham & cheese and she loved it too.

I tipped mine with a drizzle of garlic infused olive oil and roasted, salted pumpkin seeds. Served with baguette and roasted chicken. It was the perfect snowy day meal! I suspect it will be even better the next day when the flavors fully infuse!

I made this Absolutely Amazing recipe and intended on sharing some with my son, but I noticed he hadn't eaten his bowl, so I asked him if I could have his and ended up eating the ENTIRE pot!! It was the best soup, and I mean THE BEST tasting soup ever!! Crazy delicious. I'm making this often!! It's even healthy and easy to make!!! Blessed!! Thank you for this Great recipe!!

This roasted vegetable soup is incredible. You are right, the veggie choices make a wonderful blend in flavour! I think that I will add white kidney beans in my next batch - just for some extra protein.

Brilliant recipe indeed!! Have done this now a few times over and today made enough for another meal. My wife, myself and my 19 year old son very full after only one serving!! I love these winter soups and have been making them for many years. To roast onions without burning i strip the outer leaves and wrap the bulb in foil with olive oil on top of the bulb. You can also add your garlic cloves to the parcel.

It’s a cold rainy day in my city and what better time to have this for dinner with a grilled cheese sandwich than this. I used a vegetable better than bullion which makes making any broth a breeze and it turned out amazing instead of the reserved veggies I used fried onion and that worked too. It is a great recipe and comes together in a cinch.Thank you.
