I love these long form content videos! I'm usually not able to watch it all in one sitting, but I love being able to come back and watch more. They're really great deep dives into these amazing places. Keep up the awesome job!

50:15 Asian noodles were originally made from wheat flour in China and were introduced to Korea as wheat flour noodles.
However, due to geographical conditions, the cold climate restricted crop cultivation, and since they could not grow enough wheat for noodles, which was a side dish, while growing rice as a staple food, in Korea (then Goguryeo) noodles were made from buckwheat.
So in Korea, there are two types of noodles: wheat flour noodles and buckwheat noodles.
This has continued to this day, and has become Korean-style buckwheat noodles such as Pyongyang Naengmyeon, and these buckwheat noodles became buckwheat soba when they crossed over to Japan.
The rice noodles in Southeast Asia are a variation of wheat noodles, which were made from rice, which was easier to grow instead of wheat, after southern Chinese people, who had wheat noodles as their staple food, crossed over to Southeast Asia.
Therefore, wheat flour noodles are still the basis of Asian noodles today, and it is difficult to say that rice noodles are the mainstream.
The noodles you ate are a traditional dish called kalguksu, which has nothing to do with the US military government or wheat flour support. Instead, the Busan region's Milmyeon is a wheat flour version of Pyongyang Naengmyeon, and is related to wheat flour support from the United States.

What is the face mask etiquette in Seoul? I am seeing lots of shots with you wearing one, but it seems sporadic. Is it required or recommended?
