To avoid a cooked banana flavor (and any cooked fruit flavor) and yield something fresher tasting, try making a cold oleo syrup by steeping the bananas in sugar until a syrup forms and then blending with water and straining. More of a vibrant/fresh flavor. Stovetop = baked banana/banana bread flavor. Not a bad thing, but less tropical and fresh.

Disclaimer: It's all just my guesses and IMHO.

Banana syrup: peal 1 banana, cut it into thick slices, add to pot with 1 cup of sugar and 1 cup of water. Heat gently stirring until foaming and boil until necessary condition of substance. Strain it and put syrup into bottle, seal it and put bottle into fridge.

Chocolate sauce: cacao powder, sugar and water in certain proportion what i don't know because this measure cups from set.
You can try: 1 ½ cups water, 1 ½ cups white sugar, 1 cup cocoa powder.

Making espresso with pretentious stuff you don't need or just use 1 shot espresso you like.
And ready all for mixing.

Mixing (better use narrow and tall glass): fill main volume with ice,
⅓ of glass with banana syrup,
⅓ with tonic
⅓ with espresso
And save some space for chocolate sauce.
Slightly mix it and enjoy!
