I thought that opening of "wee ahh" was pronouncing the word lol

It's not a word. You don't "pronounce" it as a word, in English or any other language. It's an abbreviation of the Latin words "seculorum amen" using only the vowels. It is found in musical notation to indicate the correct underlay of the text in various chant formulae known as psalm tones. At best, you might pronounce each of the letters as they would sound in the full text they represent, viz. "eh ooh oh ooh ah eh"

Naturally, the most reliable pronouncer of "euouae" would be someone with a wacky accent.
