Thank you, this was very helpful. I was trying to decide how deep of a tart pan to buy, and based on your video decided to get a deeper dish, that way i'll be covered for any height.

I have a new tart pan that is perforated, like you I love new bakeware. The tart pan has a removable bottom, and the holes are on the bottom as well as on the sides. I want to bake a cheesecake in it using a graham cracker crust but, I am afraid that the liquid will leak into my oven because of the holes. Should I place the tart pan onto a cookie sheet? I suppose that will defeat the purpose of having a perforated tart pan, but there are holes on the sides too. Or would it be better to do a no bake recipe in this type of tart pan, baking only the crust? Thank you in advance! Sharon Btw I loved your video.

can you do an all butter crust in a tart pan? how does that work with serving. better to have a removable bottom or not?
