In this video I am showing you how to make easy pumpkin gnocchi, which makes the perfect starter or side dish to a cozy and comforting fall/winter meal.

PUMPKIN GNOCCHI

Ingredients:
1 1/3 Cups Canned Pumpkin
2 1/2 Cups Flour
1 Cup Ricotta
2/3 Cup Parmesan Cheese
1/2 tsp Salt
1/2 tsp Pepper
1/2 tsp Nutmeg
20 Fresh Sage Leaves
3 Tbsp Butter
1/2 Tbsp Olive Oil
2 Tbsp Chopped Walnuts (optional)

Method:
1. Strain measured pumpkin in a paper towel lined strainer for 10-15 minutes to remove excess moisture. You should have 1 cup of pumpkin remaining.
2. In a large mixing bowl, combine pumpkin, flour, ricotta, parmesan cheese, salt, pepper and nutmeg. Mix all ingredients together with a wooden spoon until mixture just comes together. Do not over mix.
3. Flour surface and turn out dough. Kneed very briefly to bring dough together and form into a flat rectangle. Cut dough into 6 even pieces.
4. Roll out dough into an even rope and cut into 1/2 inch pieces.
5. With a flour dusted fork, press gently into gnocchi pieces to form indentation.
6. On a stove, bring a large pot of water to a boil. Salt water and gently add gnocchi, cooking until pieces float, about 2-4 minutes.
7. Meanwhile, heat 3 tablespoons of butter plus 1/2 tablespoon olive oil in a large skillet.
7. Strain gnocchi and transfer to skillet. Add sage leaves and walnuts. Cook until gnocchi are browned on the outside and butter has turned slightly brown, approximately 5-8 minutes. Serve immediately.
