One question I had, for the cancel button, does Woocommerce wait those three days before processing the payment? Or does it take the payment then refund it after cancellation?

About the "Link previous WooCommerce guest orders to customer account after registration" snippet it will work for future orders where the user does not sign in but uses an existing mail that is registered (some products on my site are not required to have an account and some others yes but I would like to link them all so they can see them on the client dashboard)
