It’s not about the marshmallow, it’s about the hot chocolate. It’s all about the deep chocolate flavor on a cold winter day and how it warms your hands, lips, and you can feel how it warms you as you sip it. It’s not about expense or fancy marshmallows. I’ve had thee most amazingly creamy hot chocolate in my life (homemade) after a day of sledding outside.

Mexico City hot chocolate. Thick enough that it can hold a churro, but light enough that it doesn’t feel like eating a stick of cocoa butter. It’s a completely different animal than the EuroAmerican style. 🇲🇽

Chocolate was born in Mexico and I am very fortunate to live in one of the country's chocolate cities, Oaxaca, everything is handmade and incredibly delicious and cheap, because you buy it directly from where the cocoa is harvested and processed ❤️

Keto hot chocolate, makes about a 12 ounce serving. Try this and make your own adjustments/improvements:

1 ounce heavy cream
1 ounce butter
1 ounce buttermilk
7 ounces milk of choice*
1 ounce unsweetened chocolate, chopped
Half an ounce unsweetened cocoa powder
Pinch of salt
Pinch of espresso powder
Pinch of pure stevia powder (or to taste)
Pinch of pure monk fruit powder (or to taste)

Put all ingredients, except for the dry powders, in a pot and heat on a low flame to melt and disperse the butter and chocolate into the milks and cream.
In a bowl, combine cocoa powder, espresso powder, stevia, salt and monk fruit powder, and whisk.
Add the dry ingredients into the warmed milk combination stirring continuously.
As soon as the hot chocolate begins to simmer, remove it from the heat. Do not boil.
Taste for sweetness. Add more sweetener if desired.
Allow to cool, refrigerate for at least 4 hours to let flavors develop/meld.
Remove from fridge, stir, reheat to preferred temperature. Enjoy.

*Unsweetened milk alternatives usually have fewer carbs than dairy milk but I prefer dairy, though I drink nondairy as well. Experiment. Even if you use dairy, that will be the largest carb component in this recipe, adding about 12 carbs for the milks. Consider combining nondairy with dairy if your strong preference is dairy but you want to cut carbs. By just not using sugar, this hot chocolate is far better than traditionally made sugar laden hot chocolate, which can easily top 50 carbs, or more, depending on the quantity consumed, and the add-ons, like sugar sweetened marshmallows and sugar sweetened whipped cream. As written, even using dairy, this recipe is about 15 to 17 net carbs and is rich tasting and chocolatey. It is also very customizable. If you want a stronger chocolate flavor or less intense chocolate flavor, adjust the chocolate components per your preference. If you want it sweeter, add more stevia and monk fruit. If you want it richer, add more butter.
