Easy Oreo Eyeball Truffles - Cheap, Spooky and Delicious!

Do you want a spooky treat for this Halloween? How about a rich and delicious treat that you can throw together easily and without spending a ton of mummy moola?
No expensive white chocolate here, just some plain vanilla frosting will do the trick. The whole thing goes together for a tiny bit more than a bag of white chocolate costs. Dad's recipe is for 10 Eyeballs and that should be enough unless you are having a party. These things are rich! By cutting the normal recipes in half you end up with some Oreos to snack on later, some cream cheese for a bagel and a few M&M's as a treat.
Dad's Recipe for Oreo Eyeball Truffles
Shopping List:
1 - Package of Oreo Cookies -$2.99
1 - Jar of Vanilla Frosting - $1.50
1 - 8 Ounce Package of Cream Cheese - $1.88
1 - Bag of M&M - $.88
1 - Red Gel Decorating Tube - $1.48 (Optional)
Recipe Ingredients (Makes 10, double if you want 20):
18 Oreo Cookies (1/2 Package)
4 Ounces of Cream Cheese (1/2 Package)
8 Ounces of Vanilla Frosting (1/2 Jar)
10 M&Ms
Step 1:
Place the Oreo cookies in a food processor and pulse until they are crumbs.
Step 2:
Add the 4 ounces of cream cheese (works best if room temp) and pulse until a "dough" forms.
Step 3:
Line a container or a cookie sheet with wax paper. Make sure it will fit in your freezer.
Step 4:
Using a large kitchen spoon scoop out enough dough to form a ball. Then roll the dough into balls using your hands. Place the balls on the wax paper.
Step 5:
Freeze for 30 minutes.
Step 6:
Microwave the icing for 15 seconds. Stir the icing and make sure it is a "pourable" consistency. If it is too thick to pour microwave in 5 second intervals until it is. If it is too thin add some more icing from the jar and stir.
Step 7:
Make sure the "eyeballs" are spaced far enough apart that they you will have room to pour icing around each one completely. Then pour the icing over each "eyeball" making sure to coat the whole truffle.
Step 8:
Add 1 M&M to the center of the ball to make it an official "eyeball".
Step 9:
Freeze again for 30 minutes.
Step 10:
You can add details like veins using an icing pen if you like or just eat your plain eyeballs as is. Serve immediately or store in the refrigerator. If you store in the refrigerator the M&M will fade but that just adds to the spookiness.
