This video will teach you how to prep one of my favorite tubers; salsify. Salsify is great sauted, roasted or braised, especially when served with sweat breads, lamb and beef.

This is farmed Salsify from Belgium. There are different varieties of wild salsify that you can find growing throughout various regions of the world, but the preparation should stay pretty much the same. Peel with a sharp peeler, blanch with a cold water start, and then cook with a secondary cooking method like sauteing, roasting, etc.

Classic German veg. Traditionally in my region in Bavaria, we prepare it in a thick, creamy white roux with a bit of vinegar, and serve it with game dishes, especially like hare or deer.
