Crispy Rice Toffee Bars

Very sweet, but very good!

Cut this recipe out of a magazine years and years ago and I don't remember where I found it. It may be on the Kellog's website. It was originally called "silly toffee squares" but I couldn't see what was silly about these, so I renamed it.

Base:
In a mixing bowl combine:
1/2 cup all purpose flour
3/4 Crisp rice cereal
1/4 tsp baking soda
pinch salt
1/2 cup firmly packed brown sugar
1/3 cup butter or margarine melted
Press into a greased 8 x8" baking dish and bake at 350 F for 10 minutes or until brown on the edges.
Cool slightly.

Filling:
In a saucepan combine 300 ml (10z) of sweetened condensed milk, 1/2 cup butter and 1/2 cup brown sugar. Over medium low heat, bring to a full boil and boil 5 minutes stirring constantly. Remove from heat and pour over baked crust. Spread over crust and let cool for about 15 minutes.

Topping
Melt 1/2 cups chocolate chips and stir in 1 1/4 cups of crisp rice cereal until cereal is coated. Using two forks spread over caramel layer and chill several hours to set. Cut into squares (small squares, as these are very sweet).

This would probably be good with another kind of cereal as well.

I love that while you make a lot of cookies and treats, you and your family are in great shape! It shows what a great mother you are by how you off-set the treats with a balanced diet.

Yum. Sounds like a fun treat. I love chocolate crunchy things. Even though this has 3 layers, it doesn't seem too fussy other than the constant stirring of course, but that's not so bad.

Hi Tammy! Big fan from New Zealand here, I've made lots of your bars and will probably make these :) I haven't been able to do much of the decorating you do because our candies are not the same here, so I really couldn't believe what happened a few days ago: I was shopping in a local gift shop and they had geese measuring cups, exactly like yours!! I was so shocked hahaha anyway thought that was funny and you might want to know, thanks for all your great videos!

White sugar is made from a sugar cane or some similar plant. Brown sugar is purified or refined white sugar and a syrup is added(usually molasses) to give it the texture and color. Adding the syrup also adds a richness to the sugar. If you don't have brown sugar, you can probably substitute white sugar. However, the recipe would most likely turn out differently than in the video.
