We add garlic and curry leaves to the pol sambol. (maybe it's a southern thing ) I have to agree with you the fact that the traditional way it is made is so much tastier than using the food processor to make it. But is the exact way we make the pol sambol at home except for the microwaving part. Next time I'll try it with your last step. Subscribed!

I have never used Garlic. Must try adding garlic which will be much more healthy. In fact, I just bought Kakulu hal, which will go beautifully with the pol sambol. Sometimes when there is no lime juice, I crush and add a piece of lunu-dehi. Some time back, I read an article, the Obama's were holidaying in one of the tiny Islands in the Indian Ocean, where there had been a Sri Lankan chef in the hotel. He had given them Lunu-dehi rice, which they had enjoyed very much. Wonder whether you could come up with something like that? Thanks for the tip Asai Rasai!
