Elvis is in the building!! If you're wondering what an Elvis cookie could possibly contain - that would be bananas, candied bacon, peanut butter and chocolate and let me tell you, this recipe is SO delicious, you need to make them asap! We popped them in-store for one day only at C&D Soho and they FLEW off the counter - do we need to do more One Time Only bakes? Let us know in the comments!

Makes 18-20 Cookies.

COOKIE DOUGH
60g Mashed Banana
120g Brown Butter (liquid)
200g Light Brown Sugar
1 Egg Yolk
½ tsp Vanilla
170g Plain Flour
½ tsp Bicarb
½ tsp Salt
50g Candied Streaky Bacon (around 4 strips)
120g 54% Choc Chips
25g Banana Chips
100g Smooth Peanut Butter

CANDIED BACON
50g Dark Brown Sugar
5 Pieces Streaky Bacon

I always toss my bananas in the freezer when they start to get brown. When I get 6, it means banana bread timeeee. Now I will have to try these

Greetings from Belgium. Thank you again for the new fantastic video that is explained very well as always. I'm not a banana fan, but I'll definitely give it a try. In the meantime I have also discovered (thanks to your masterclass) that if the butter is not at the right temperature, this affects baking. I also ordered your book: Crumbs & Doilies and it should arrive in the mail today. I'm really looking forward to it and plan to try all the recipes and learn more and more and get a decent result. Craft makes art.

Just made a batch. I've rolled them into balls and they are in the fridge cooling. One hour left before I can bake them.

Oh this is so missing some raspberries or something for the jelly part(elvis did have that in the sandwich too, so im told!). I'm immediately making these!
