Nicole's cookbook recommendation seems to be a hybrid of two and doesn't actually exist. Julia Child wrote multiple cookbooks (most notably Mastering the Art of French Cooking) but not the Joy of Cooking; that was by Irma S. Rombauer. I recommend both, but especially Rombauer's!

I know chipotle has kind of taken barbacoa but it’s not just a chipotle thing. It’s a very old style of underground barbecuing from Mexico and the Caribbean, so a barbacoa taco if it was done right, is a very traditional taco to have on your menu
